Whole30 Challenge: Day 21

Tues, March 21st

DISCLAIMER:

BREAKFAST:

For breakfast, I started off with an omelette with bison, bell peppers, tomatoes, and onions.

TASTE TEST: The omelette was flavorful. I am officially getting better at flipping omelettes as well.

LUNCH:

Since we made extra Whole30 seasoned chicken breasts this weekend, I took advantage of the minimal kitchen time and created a healthy Whole30 salad with a seasoned chicken breast, strawberries, blackberries, blueberries, almonds, and power greens, adorned with green onions and drizzled with our Whole30 Trifecta Salad Dressing.

TASTE TEST: Delicious and nutritious.

DINNER:

It was Hubs turn to make dinner which meant dinner would likely be an interesting hodgepodge, being that it was already 8:30pm, and neither of us felt like cooking... He started by bringing me a bowl of steamed veggies and some strawberries and told me that was dinner... Good attempt, but not good enough. ;) Then he took a turn towards the creative side and surprised me with our Whole30 version of spaghetti... He utilized the spaghetti squash we had previously cooked (with sea salt, pepper, and garlic) and the remaining organic ground beef we had in the fridge along with the organic, no-sugar-added, herb-roasted pasta sauce (which we found at Whole Foods). Way to be resourceful hubs!

I'll admit, I do fancy a good pasta dish. And while my normal preparation for spaghetti squash involves melted cheese... I knew we would need to keep an open mind since pasta and cheese are both sitting on the sideline during Whole30. Even though this recipe will never take the place of spaghetti, this is quite the tasty and healthy alternative as spaghetti squash contains a wide range of vitamins, has a decent amount of fiber, and is low in fat and calories.

TASTE TEST: For a healthy alternative, this was surprisingly pretty tasty.
